Hyderabadi Biryani Recipe: A Flavorful Journey to Southern India
Ingredients:
For Marination:
2 lbs chicken, cut into pieces.
1 cup plain yogurt.
2 tablespoons biryani masala.
1 tablespoon ginger-garlic paste.
1/2 cup mint leaves, chopped.
1/2 cup coriander leaves, chopped.
4 green chilies, slit.
1 teaspoon turmeric powder.
Salt to taste.
For Rice:
2 cups basmati rice
Water for soaking and boiling.
Salt to taste
For Layering:
1/2 cup fried onions (for
garnish)
A pinch of saffron strands
soaked in warm milk.
4 tablespoons ghee
Instructions:
Marinating the Chicken:
Prepare the Marinade: In a
large bowl, combine chicken pieces with yogurt, biryani masala, ginger-garlic
paste, mint leaves, coriander leaves, green chilies, turmeric powder, and salt.
Allow it to marinate for at least 2 hours or overnight for optimal Flavors.
Cooking the Rice:
Soak Basmati Rice: Wash and
soak basmati rice in water for 30 minutes. Drain the water.
Boil the Rice: Bring water to a boil in a large pot. Add salt and the soaked basmati rice. Cook until the
rice is 70% done. Drain and set aside.
Layering the Biryani:
Sauté Onions: In a pan, heat 2
tablespoons of ghee. Add thinly sliced onions and fry until golden brown. Set
aside half of the fried onions for layering.
Assemble the Layers: In a
heavy-bottomed pot, begin layering the biryani. Start with a layer of marinated
chicken, followed by partially cooked rice. Drizzle saffron-soaked milk, fried
onions, and ghee over each layer. Repeat until all ingredients are used,
finishing with a layer of rice on top.
Cook on Dum: Seal the pot
tightly with aluminum foil or a lid. Cook on low heat for 20-25 minutes. This dump
cooking method allows the flavors to meld and the chicken to cook tenderly.
Serving:
Garnish and Serve: Once done,
gently fluff the biryani with a fork. Garnish with the remaining fried onions.
Serve hot, ensuring each plate captures the aromatic essence of Hyderabadi
Biryani.
