Chicken Biryani Recipe

Ingredients:

  • 2 cups Basmati rice


  • 500g chicken, cut into pieces

  • 1 cup yogurt
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped

  • 1/4 cup cooking oil or ghee
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped cilantro (coriander leaves)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods


  • 4-5 cloves
  • 2-inch cinnamon stick
  • Salt to taste
  • Fried onions for garnish (optional)


For Marinade:

  • 1 cup yogurt
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste.

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.




  2. Mix the chicken pieces in a bowl with the marinade ingredients - yogurt, red chili powder, turmeric powder, and salt. Allow it to marinate for at least 1 hour.


  1. In a large pot, bring water to a boil. Add soaked and drained rice along with a pinch of salt. Cook the rice until it's 70-80% cooked. Drain and set aside.


  2. Heat oil or ghee over medium heat in a heavy-bottomed pan or pot. Add cumin seeds, cardamom pods, cloves, and cinnamon sticks. Sauté until fragrant.


  3. Add sliced onions and cook until they turn golden brown.




  4. Add ginger-garlic paste and sauté for 2-3 minutes until the raw smell disappears.


  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates from the masala.


  6. Add marinated chicken pieces and cook until they are browned.


  7. Stir in chopped mint leaves and cilantro.


  8. Layer the partially cooked rice over the chicken in the pot.


  9. Sprinkle garam masala over the rice. Drizzle some saffron-infused milk (optional) for added flavor.




  10. Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes or until the chicken is tender and the rice is fully cooked.


  11. Garnish with fried onions if desired.


  12. Serve hot with raita or your favorite side dish.
