Ingredients

  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili powder
  • Salt to taste

For the Masala Sauce:

  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 large onion, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 2-3 green chilies, slit (optional)
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric powder
  • 2 teaspoons paprika
  • 1 teaspoon garam masala
  • 1 cup tomato puree
  • 1 cup heavy cream
  • Fresh cilantro, chopped (for garnish)
  • Salt to taste

Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, combine the yogurt, lemon juice, ginger-garlic paste, garam masala, turmeric powder, ground cumin, ground coriander, red chili powder, and salt.
  2. Add the chicken cubes to the marinade, ensuring they are well-coated.
  3. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for a deeper flavor.

Step 2: Cook the Chicken

  1. Preheat your oven to 200°C (400°F).
  2. Thread the marinated chicken onto skewers or place them on a baking sheet lined with aluminum foil.
  3. Bake for 15-20 minutes until the chicken is cooked through and slightly charred. Alternatively, you can grill the chicken on a barbecue or stovetop grill.

Step 3: Prepare the Masala Sauce

  1. In a large pan, heat the vegetable oil and butter over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and green chilies (if using), and sauté for another 2 minutes.
  4. Mix in the ground coriander, ground cumin, turmeric powder, paprika, and garam masala. Cook for a few minutes until the spices release their aroma.
  5. Stir in the tomato puree and cook for 10-15 minutes until the oil starts to separate from the masala.
  6. Reduce the heat and slowly stir in the heavy cream. Simmer for 5-10 minutes, adjusting the salt to taste.

Step 4: Combine Chicken and Sauce

  1. Add the cooked chicken pieces to the masala sauce and let it simmer for an additional 10 minutes, allowing the flavors to meld together.
  2. Garnish with fresh cilantro.
