  • 1 (14 oz) block paneer, drained and cubed

  • Fresh cilantro, chopped, for garnish (optional)

Instructions:

  1. Heat oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened about 5 minutes.
  2. Add garlic, ginger, and green chili (if using) and cook for 1 minute, until fragrant.
  3. Stir in cumin seeds, coriander powder, turmeric powder, red chili powder, and garam masala. Cook for 30 seconds, until spices become fragrant.
  4. Add crushed tomatoes and bring to a simmer. Cook for 5 minutes, stirring occasionally.
  5. Add spinach and water. Cook, stirring occasionally, until spinach is wilted and sauce has thickened, about 10 minutes. You may need to add more water if the sauce becomes too thick.
