Ingredients:

For the Marinade:

1/2 cup plain yogurt (full-fat preferred)



1 tablespoon lemon juice

1 teaspoon turmeric powder

2 teaspoons garam masala powder

1/2 teaspoon chili powder or cayenne pepper (adjust to your spice preference)

1 teaspoon ground cumin


1 tablespoon ginger, grated

2 cloves garlic, crushed

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons ghee or vegetable oil


1 medium onion, chopped

1 (28-ounce) can crushed tomatoes

1/2 cup heavy cream

1 tablespoon tomato paste



1/2 teaspoon kasuri methi (dried fenugreek leaves) (optional)



1 tablespoon sugar

Salt to taste

Fresh cilantro, chopped (for garnish)


Method:

Marinate the Chicken: In a large bowl, combine all the marinade ingredients with the chicken pieces. Massage the spices into the chicken, ensuring they're evenly coated. Cover and refrigerate for at least 3 hours, preferably overnight, for maximum flavor absorption.
