How to Cook Prawn Crackers: A Simple Guide

Part of the noodle family, prawn crackers, or shrimp chips, go by various names in different countries.

However, they are vastly popular and consumed in most parts of the Asian food chain. Being very light and crisp, it is highly flavored with lots of umami intensity, and it can indeed be enjoyed either independently or accompanying other mains. Ingredients

  • Dried shrimp crackers, mostly available at Asian stores.
  • Cooking oil (vegetable, canola, or peanut oil)

Equipment

  1. A deep-frying equipment or a deep frying heavy-based pan

Instructions

  1. Get the oil ready.
  2. Choose the correct pan: If you have a deep fryer, use it. If not, that deep, heavy-bottomed pan you've got will be perfect. Depth is significant because it lets those crackers fully puff out but not be too crowded.
  3. Oil the Heat Adequate oil should be poured into your pan or fryer to submerge the prawn crackers in it. Let it heat on a medium-high fire up to around 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of one of the crackers into it; if it puffs up almost instantly, your oil is ready.

2. Deep fry the prawn crackers

  • Add the Crackers: Gently drop a few prawn crackers into the hot oil. Do not overcrowd the pan; they puff up very quickly. Fry in small portions
  • Watch the magic: Within seconds, the prawn crackers will puff up and float. The process takes lightning time, so do not keep your eyes off them.
  • Lift and Drain: Once the prawn crackers puff up, you can lift them using a slotted spoon or even tongs from the oil. Place them on paper towels on a plate to drain the excess oil.

3. Serve and Enjoy

  • Cool Slightly: Leave the prawn crackers for a minute or two to go all the crispiest way.
  • Serve: Have this prawn cracker dish as your treat, or serve it as a side to your favorite local Asian dish. They are also very good with salad and soups when adding some spiciness.

How to Perfect Prawn Crackers

Oil Temperature: The proper oil temperature is critical in this context. If underheated, the crackers will come out greasy and may fail to rise; if overheated, they quickly burn out. Batch Frying Fry in small batches to ensure even cooking and, hence, avoid congestion that will reduce oil temperatures.
