A Step-by-Step Guide to Making Mutton Biryani

Mutton Biryani, a delicious and aromatic dish, is a favorite among food lovers worldwide. Here’s a simple step-by-step guide to help you make this mouth-watering delicacy at home.



Ingredients

  • 500g Basmati rice
  • 1kg Mutton, cut into pieces
  • 2 large Onions, finely sliced
  • 2 Tomatoes, chopped
  • 2 tbsp. Ginger-garlic paste
  • 4 Green chilies, slit
  • 1 cup Yogurt
  • 1/2 cup Fresh mint leaves
  • 1/2 cup Fresh coriander leaves
  • 2 tsp Biryani masala powder
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 4 cups Water
  • 1/4 cup Ghee (clarified butter)
  • Whole spices (2 Bay leaves, 4 Cloves, 2 Star anise, 1 Cinnamon stick)

Preparation

Marinate the Mutton: In a large bowl, mix the mutton pieces with ginger-garlic paste, yogurt, biryani masala, turmeric, salt, and half of the mint and coriander leaves. Let it marinate for at least 2 hours, or overnight for best results.

Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring water to a boil, add the rice and cook until it’s 70% done. Drain the rice and set it aside.

Prepare the Biryani Base: In a large pan, heat the ghee over medium heat. Add the whole spices and sauté until they release their aroma. Add the sliced onions and green chilies, and sauté until the onions turn golden brown. Add the chopped tomatoes and cook until they become soft.

Cook the Mutton: Add the marinated mutton to the pan. Cook on high heat for 5-7 minutes, then reduce the heat, cover the pan, and let it simmer until the mutton is tender and fully cooked.

Layer the Biryani: Spread half of the partially cooked rice over the cooked mutton. Sprinkle the remaining mint and coriander leaves on top. Layer the remaining rice over the leaves. Cover the pan with a tight lid and cook on low heat for 20-30 minutes.

Serve: Your delicious Mutton Biryani is ready to be served. Enjoy it with raita or your favorite side dish.
