1/4 teaspoon salt.

1 large egg, beaten.

2 tablespoons vegetable oil.




Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

If using fresh salmon, cut it into 1-inch pieces. Alternatively, you can use canned salmon, drained and flaked.

In a large bowl, combine the salmon, breadcrumbs, parsley, dill, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper. Mix well to combine.

Add the beaten egg and mix until just combined. Be careful not to overmix, as this can make the cakes tough.

Form the mixture into 6-8 patties. 

Heat the vegetable oil in a large skillet over medium heat. Add the salmon cakes and cook for 3-4 minutes per side, or until golden brown and cooked through. 

Alternatively, you can bake the salmon cakes for 15-20 minutes, or until cooked through.

Serve hot with your favorite dipping sauce, such as tartar sauce, remoulade, or aioli.




Tips:

For a lighter version, you can bake the salmon cakes instead of pan-frying them.

You can add other ingredients to the salmon cake mixture, such as chopped vegetables, grated cheese, or hot sauce.

Serve the salmon cakes with a side of salad, roasted vegetables, or rice.
