Ingredients:

  • 500g fresh mushrooms, cleaned and sliced
  • 2 large onions, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 1 cup yogurt
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 cup chopped coriander leaves
  • Salt to taste
  • 3 tablespoons cooking oil
  •  

Instructions:

Saute Mushrooms:

Heat 2 tablespoons of oil in a pan. Add sliced mushrooms and sauté until they release water and turn golden brown. Set aside.











Prepare Masala:

In the same pan, add more oil if needed. Add cumin seeds and chopped onions, and sauté until onions turn golden brown.













Add Ginger-Garlic Paste:

Add ginger-garlic paste and sauté until the raw smell disappears.


Tomato Puree:

Add tomato puree and cook until the oil separates from the masala.


Spices:

Add turmeric powder, red chili powder, coriander powder, and salt. Cook the masala until the oil separates.












Yogurt:

Lower the heat and add yogurt gradually, stirring continuously to avoid curdling. Cook until the masala thickens.


Mushrooms in Masala:

Add the sautéed mushrooms to the masala. Mix well to coat the mushrooms with the masala.


Simmer:

Add garam masala and chopped coriander leaves. Simmer for 10-15 minutes until the mushrooms absorb the flavors.


Serve:

Your Mushroom Masala is ready! Garnish with more coriander leaves and serve hot with rice or naan.
