Ingredients:


Whole wheat tortillas








Hummus (plain or flavored)








Red bell pepper, thinly sliced

Orange bell pepper, thinly sliced

Yellow bell pepper, thinly sliced

Green bell pepper, thinly sliced











Cucumber, thinly sliced








Shredded carrots








Lettuce leaves








Instructions:

  • Spread hummus on a tortilla.
  • Arrange the bell pepper slices, cucumber, carrots, and lettuce in a rainbow pattern on the tortilla.
  • Roll up the tortilla tightly and cut it in half diagonally.
