Creamy Potatoes with Cheese and Parsley

This is a delicious and easy side dish that goes well with any meat or vegetable. The potatoes are cooked until tender and then coated with a rich and cheesy sauce, sprinkled with paprika and parsley for extra flavor and color. Ingredients

6 medium potatoes (2 pounds), peeled and cut into 1/2-inch cubes.

3 tablespoons butter.

1/4 cup all-purpose flour.

1 teaspoon salt.

1/4 teaspoon pepper.

2 cups milk.

1 cup shredded Cheddar cheese.

Paprika and minced fresh parsley for garnish.













Instructions

Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and return to the pot.

In a small saucepan over medium heat, melt butter. Whisk in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese until melted.

Pour cheese sauce over potatoes and toss gently to coat. Transfer to a serving dish and sprinkle with paprika and parsley. Enjoy!
